The week of March 4-8 is National Breakfast Week. LAUSD is launching a new student recipe contest to get them involved in creating healthier breakfast options on their cafeteria menus. Deputy Director of Food Services Laura Benavidez and Ploytechnic High School Student Jazmin Sandoval joined us to tell us about the contest and to make some sweet potato pancakes.

Sweet Potato Pancakes
Prep Time: 55 min
Cook Time: 15 min
Serves: 4-6 servings
Ingredients:
1 cup of all-purpose flour
1 cup of whole wheat flour
4 teaspoons of baking powder
2 tablespoons of brown sugar
1 teaspoon of cinnamon
A pinch of nutmeg
2 cups of milk
4 teaspoons of melted butter
2 whole eggs
1 sweet potato, cooked until tender, peeled and pureed
Directions:
In a large bowl, combine all of the ingredients. Mix together and whisk until smooth. Cook
batches in a skillet or in a pan of your choice on medium high temperature until bubbles form
on the surface. Turn over the pancakes and cook until dark golden brown.
