The happy egg co., a new egg company that believes happy eggs can only come from happy Free Range hens that roam freely on 4 acres of pasture.  A fried egg really shows off the beauty of an egg with its vibrant, rich yellow yolk. Eggs from Free Range hens  like the eggs from the happy egg co. can have a deeper looking yolk because the hens roam and forage outdoors.  On a happy egg farm, the hens live on a 4 acre farm and go outside to peck around and play in the sun.

Recipe #1

Piperade with Fried Free Range eggs from the happy egg co. (serves 4)

  • ¼ cup olive oil
  • 2 yellow onions, skin removed, halved and thinly sliced
  • 5 garlic cloves, thinly sliced
  • 4 red bell peppers, washed, seeded and stem and ribs removed, thinly sliced
  • 4 yellow bell peppers, washed, seeded and stem and ribs removed, thinly sliced
  • 14 oz can of diced tomatoes in juice
  • 1 T smoked paprika
  • 2 T Champagne or White Wine vinegar
  • 1 t fresh thyme
  • 1 t fresh rosemary
  • Salt and Pepper
  • 1 T butter
  • 4 Free Range eggs from the happy egg co.
  • Shredded Parmesan
  • 2 Large sauté pans

Directions:
In a large sauté pan, warm the olive oil over medium high heat.  Add the onions and sauté for 3 minutes, add the garlic and sauté for 2 minutes.  Then add the peppers and sauté until they start to soften (about 7 – 10 minutes), reduce the heat and add the tomatoes and juice and the paprika, vinegar and herbs.  Let this simmer for about another 10 – 15 minutes until all the ingredients are soft and juices have been released.  Season with Salt and Pepper.

In a second large non stick sauté pan over medium high heat, add butter and swirl to melt.  Gently crack the 4 Free Range eggs from the happy egg co.  into the pan and let them cook for about 3 – 5 minutes to your preferred degree of doneness, season each egg with salt and pepper.  While they are cooking plate the Piperade into 4 individual bowls and when eggs are done place an egg on top of each dish.  Finish each dish with a sprinkling of Parmesan.

Garlic Roasted Potatoes, Asparagus and Prosciutto Flatbread Pizza with Fried Free Range eggs from the happy egg co. (Serves 4)

  • 2 New Potatoes, washed and sliced into 1/8”
  • 12 fresh asparagus stems, washed and trimmed
  • 1/4 c Olive Oil, plus 1 T for pizza pan
  • 2 t fresh garlic
  • 1 t fresh rosemary, chopped fine
  • Pizza dough (room temp) or premade flatbread
  • 8 oz Pesto Sauce
  • 1 cup shredded mozzarella
  • 6 thin slices of prosciutto
  • 1 t red chili flakes
  • 1 T butter
  • 4 Free Range eggs from the happy egg co.
  • Zest of 1 lemon
  • Salt and pepper
  • Medium skillet
  • Cookie Sheet or Pizza Pan
  • Large non stick sauté pan

Directions:
Preheat oven to 400.  Place medium skillet over medium high heat to warm. Toss the Potatoes in 1/8 cup of olive oil, 1 t garlic, ½ t rosemary set aside.  Repeat process with asparagus-set aside.  Gently place potato slices into hot pan (be careful) and reduce heat to medium.  Cook each side until golden and then place on paper towels-set aside.    Brush cookie sheet or pizza pan with 1 T olive oil.  Gently pull the pizza dough to fit pan, this may take a few pulls as it will bounce back, ideally for flatbread you’ll want it to about 1/8” thin.   Spread the pesto sauce onto the flatbread.  Sprinkle the mozzarella on top.  Place the potato slices and prosciutto onto the cheese and then top this with the asparagus.  Sprinkle with red chili flakes.   Place in oven for 12 – 15 minutes until crust is cooked through .  While the flatbread is baking, in a large non stick sauté pan over medium high heat, add butter and swirl to melt.  Gently crack the 4 Free Range eggs from the happy egg co.  into the pan and let them cook for about 3 – 5 minutes to your preferred degree of doneness, season eggs with salt and pepper.   Remove pizza from oven and slice into 4 slices.  Top each slice with an egg and sprinkle zest from lemon over entire pizza and serve immediately.

Egyptian Eye with Free Range eggs from the happy egg co. (serves 1)

  • 2 Tablespoons of butter
  • 1 piece of Bread toasted
  • 1 Free Range egg from the happy egg co.
  • Round cookie cutter the size of the yolk
  • Spatula
  • Non stick pan

Directions:
Toast bread and then butter both sides after bread has toasted.  Cut out a whole in the middle of the toast approximately the size of an egg’s yolk. Heat non-stick pan at medium heat with a tablespoon of butter. When butter has melted and covered bottom of pan (swirl it to help) crack a Free Range egg from the happy egg co. into the pan. When the egg white starts to cook you will place the toast with center cut out over the egg allowing the yolk to fit in the hole. Cook until egg white is done, then flip and cook for two seconds on the opposite side allowing the top of the egg to cook without hardening the yolk. Remove from pan and enjoy.  Most people cut the toast into strips and dip them in the egg yolk.  Yum!
